  • Shrimp, Mango, and Avocado Salad with Peanut Dressing


    • 2 tbsp light coconut milk
    • 1/2 tsp coconut extract
    • Juice of 1 lime
    • 1/2 tbsp of fish sauce
    • 2 tbsp of peanut butter
    • 1 tbsp of water
    • 1/2 of a long green chili pepper, minced
    • 1 tsp brown sugar
    • 2 tbsp chopped fresh cilantro
    • (or a combination of cilantro and mint) 2 tbsp red onion, minced

    Remaining Ingredients:

    • 1 large ripe mango, peeled, pitted, cut into thin slices
    • 1 avocado, halved, pitted, peeled, cut into thin slices
    • 6oz package of salad greens
    • 1/2 oz chopped peanuts
    • 8oz shrimp, peeled and deveined
    • Bangkok blend, or your choice of seasoning


    1. Mix all the dressing ingredients. You may adjust the amount of chili pepper or fresh herbs depending on your preference.

    2. Toss the shrimp in the seasoning and grill over medium-low heat for 1-2 minutes per side, just until opaque.

    3. Arrange the mango and avocado slices over the salad greens. Top with the grilled shrimp, drizzle with the coconut-peanut dressing, and sprinkle with chopped peanuts.
